A lesson in Koki cooking !

Koki is a delicious pudding, made from black-eyed peas. These peas are native to West Africa, and they have been enjoyed for thousands of years throughout the continent. I always had these beans in the form of a pudding, called “Koki”, made with red palm oil and ground pepper and served with boiled ripe plantains.
